ORGANOLEPTIC DESCRIPTION

Aroma: Soft, elegant, flower, caramel, chocolate, red dried-raisins.

Flavour: Soft, elegant, juicy, red berries, lime, red grapes.

HISTORY OF THE FARM: 

La Esperanza farm is the fruit of a family labour. Don Salatiel Zavala and his wife Olga have been producing coffee since 1994, when they became owners of the farm. Their children Abner Samuel and Paola Zavala González have joined and been working with them along the time.

The farm counts with 7,75 ha with 7 ha dedicated to coffee plantations and a total production of 350 quintals of green coffee, varieties of Maracaturra and Caturra.

La Esperanza Farm is located in the Community of Las Manos, Département de Dipilto. This area is pretty well accessible and counts with a very rich biodiversity.

WORKING PRACTICES

Only the best ripe cherries are collected during the crop. Beans are normally pulped, left to fermentation and then dried. The farm also experiments the honey process where the coffee is pulped and then immediately left to dry in the bags without being washed.

BENEFITS AND SOCIAL PROJECTS:

Sponsorship of the school where are studying the children of the workers (School of El Cambalache).
