In 2016, coffees produced in the region of Huila captured almost every prize at the Colombian Cup of Excellence contest, obtaining the first three positions. Over the past years, this department has been producing very high quality coffees overcoming the quality of other traditionally strong coffee-producing regions such as Antioquia and Quindío. In fact, the coffee grower responsible for this micro-lot, Doralba Fernández García, was granted the second place in this competition. Without a doubt, this is a recognition to those who give their very best to achieve the highest possible quality standards.
Doralba build her finca “La Heredad” through hard work and determination, planting only Caturra coffee trees, which grow at 1,600 m.a.s.l, in a temperate climate and soils rich in organic matter. She takes into account all these environmental and weather conditions in order to establish the parameters for her coffee milling processes and techniques. Doralba uses fermentation tanks for 24 to 36 hours, and parabolic drying beds for 10 to 15 days. It is noteworthy that the use of parabolic dryers is very common among coffee growers from Huila, since it´s a region with a semihumid tropical climate, which increases the time of drying periods.
All this knowledge is reflected in the quality of the coffee produced by Doralba, and features some of the most beautiful of Colombia: the work of its people and the quality of their coffee beans.
